Abstract
Patente de Invenção: "UTILIZAÇÃO DE EMULSÕES DE PIT EM PROCESSOS DE FERMENTAÇÃO". A invenção refere-se à utilização de emulsões de O/W, contendo pelo menos água, emulsificantes, bem como uma fase oleosa, que contém um ou mais compostos, escolhidos dos grupos a) dos alquilésteres de ácido graxo e/ou b) dos triglicerídios de origem vegetal, sendo que as emulsões são produzidas de acordo com o processo de PIT e apresentam um tamanho de gota de 50 a 400 nm, em processos de fermentação.
