Abstract
Patente de Invenção: "EMBALAGEM DE ATMOSFERA MODIFICADA COM REDUÇÃO ACELERADA DE NÍVEL DE OXIGÊNIO EM COMPARTIMENTO DE CARNE" . Uma embalagem de atmosfera modificada (10) inclui um primeiro e um segundo compartimentos separados por um membro de divisão substancialmente permeável ao oxigênio. O primeiro compartimento contém um lavador de oxigênio (28) ativado com um acelerador de lavador de oxigênio. O segundo compartimento contém um corte a varejo de carne crua (26). Várias técnicas são empregadas para a rápida redução do nível de oxigênio no segundo compartimento abaixo dos níveis sensíveis a pigmento de modo que o crescimento de metamioglobina seja inibido. Algumas destas técnicas aumentam o fluxo de oxigênio do segundo compartimento para o primeiro compartimento através do membro de divisão, enquanto outras técnicas absorvem diretamente o oxigênio no interior do segundo compartimento.
