Abstract
Patente de Invenção: "PROCESSO PARA FABRICAÇÃO DE COHOCOLATE OU SEMELHANTE CONTENDO ÁGUA" .A fim de fabricar chocolate ou semelhante com incorporação de 1 a 40% em peso de água, uma massa de chocolate ou semelhante é introduzida cuidadosamente em uma emulsão de óleo em água, de modo que a emulsão não é destruída nem há qualquer interação entre os cristais de açúcar e a dase aquosa dispersa.A massa é vantajosamente submetida ao condicionamento térmico subseqüente, de modo que os cristais de açúcar difundem-se nas microgotículas de água da emulsão, a estrutura da qual permanece intacta.
