A presente invenção refere-se a uma associação de antibióticos ionóforos poliéteres, preferencialmente a monensina, com -Lactâmicos ou Tetraciclinas sob a forma de pó dispersante, pastilha dispersante, tablete dispersante ou comprimido dispersante, para controle do crescimento bacteriano em mosto de fermentação alcoólica, sem afetar a produtividade das leveduras e aos seus usos.
