Abstract
"FILMES E INVÓLUCRO COM PROPRIEDADES ANTILISTERIÓTICAS". Esta invenção descreve a proteção de produtos de carne contra Listeria monocytogenes, tratando o invólucro com uma bacteriocina, nisina, e a solução de franzimento que contém o antioxidante eritorbato, onde o produto de carne incorpora um agente bacteriostático dos sais de potássio ou sódio do ácido diacético ou ácido lático, e onde o tamanho de partícula da nisina é muito menor do que aquele encontrado comercialmente.
