Abstract
"BACTÉRIA DO GÊNERO BIFIDOBACTÉRIA E ALIMENTOS FERMENTADOS USANDO A MESMA". Pretende-se fornecer uma bactéria pertencente ao gênero Bifidobacterium, que apresenta um índice de sobrevivência, mesmo após estocagem sob agitação, e permite a produção de alimentos fermentados que contêm uma grande quantidade de células viáveis; e alimentos fermentados ricos em células viáveis, tendo a bactéria pertencente ao gênero Bifidobacterium e apresentando efeitos fisiológicos favoráveis de regular cepas nocivas no intestino, melhorando distúrbios intestinais, e similares. Uma bactéria pertencente ao gênero Bifidobacterium que apresenta um índice de sobrevivência de pelo menos 30% após cultivar em um meio contendo leite como componente principal, até que a contagem viável atinja 1 x 10^ 8^ cfu/ml ou acima, e depois estocar a 10 C sob agitação por 14 dias; e alimentos fermentados que usam a mesma.
