Abstract

"EMULSÕES E DISPERSÕES AQUOSAS DE FITOSTERÓIS". A presente invenção refere-se a fitosteróis podem ser dispersos em altas concentrações em meios aquosos através de neutralização parcial das inerentes propriedades emulsificantes w/o de fitosterol usando um emulsificante não-esterol tendo um maior valor de HLB. Um emulsificante não-esterol preferido é uma preparação de lecitina compreendendo lisolecitina. Estas dispersões de fitosterol aquosas de baixa viscosidade podem ser usadas para preparação de emulsões w/o estáveis, de diminuição de colesterol no sangue tais como pastas e margarinas.
