Abstract

"COMPOSIÇÃO EM PASTA, MÉTODO PARA A PREPARAÇÃO DA MESMA, USO DE AMIDO DESGELATINIZADO DEGRADADO E RETICULADO, PRODUTO ALIMENTÍCIO E MÉTODO PARA A FABRICAÇÃO DE UM PRODUTO ALIMENTÍCIO DE FRIABILIDADE AUMENTADA". A presente invenção diz respeito ao uso de um amido degradado e reticulado em uma cobertura para alimentos ou composição em pasta para produtos alimentícios. Surpreendentemente, foi observado que, em virtude do uso deste amido específico, as propriedades texturais e, em particular, a friabilidade de uma cobertura sobre um produto alimentício, são significativamente melhoradas.
