Abstract

"COMPOSIÇÃO DE ÉSTERES DE ESTEROL-ÁCIDO GRAXO E ALIMENTOS CONTENDO A MESMA". A presente invenção fornece alimentos que contêm uma composição de ésteres de esterol-ácido graxo e têm uma textura, paladar e aroma agradáveis, em que esteróis livres dificilmente se cristalizam durante o armazenamento e uma grande quantidade da composição de ésteres de esterol-ácido graxo pode ser incorporada aos alimentos com um baixo conteúdo de óleo e gordura. Os alimentos contêm 1% do peso ou mais da composição de ésteres de esterol-ácido graxo com um grau de esterificação acima de 90%, permitindo assim que se obtenham alimentos que contêm óleos e gorduras tenham um bom efeito emulsificante.
