"BACTÉRIAS LÁCTICAS MUTANTES CAPAZES DE SUPEREXPRIMIR PELO MENOS UMA PEPTIDASE". invenção diz respeito a mutantes de bactérias lácticas, como L. lactis ou S. thermophilus capazes de superexprimir uma ou diversas peptidases, caracterizadas por pelo menos um dos fatores de regulação negativa de pelo menos um dos genes das peptidases das ditas bactérias ser inativada, sendo que o fator de regulação negativa é escolhido dentre o grupo que compreende o gene cody, os genes do operon lev, um gene que codifica uma proteina homóloga a uma glicosidase.
