Abstract
Patente de Invenção: "POLIFOSFATOS ANTIMICROBIANOS EM PROCESSAMENTO ALIMENTAR". Polifosfatos controlam o crescimento de bactérias durante o processamento de alimentos. Estas composições compreendem polifosfatos antimicrobianos sozinhos ou em combinação com ácidos orgânicos e/ou seus sais e são eficazes em aplicações relacionadas com alimentos, inclusive composições de limpeza para desinfetar a superfície do alimento e para limpar e desinfetar o equipamento usado no processamento de alimentos, e composições a serem adicionadas ao alimento para inibir o crescimento de microorganismos responsáveis por doenças de origem alimentar e deterioração durante a distribuição e o armazenamento.
