"AMIDO INIBIDO TERMICAMENTE PREPARADO COM OLIGOSSACARÍDEOS". A presente invenção é dirigida a um processo para preparar amidos termicamente inibidos usando oligossacarídeos para aperfeiçoar a razão de inibição. As combinações de amido/oligossacarídeo resultantes aperfeiçoaram a estabilidade de armazenamento frio e podem ser usadas em vários produtos, especificamente produtos alimentícios.
