Abstract
MISTURA, PRODUTO, MÉTODO PARA PRODUZIR UMA COMPOSIÇÃO, E, FARINHA DE MILHO DOCE CLARIFICADA.A presente invenção refere-se a misturas de encapsulação, composições encapsulantes, produtos encapsulados e métodos de fabricação dos mesmos. As composições e os produtos compreendem um emulsificante e uma farinha doce e são úteis para encapsular ingredientes à base de óleo. Tais composições e produtos podem ser formulados para ter boa retenção de óleo e boa resistência à oxidação sem o uso de maltodextrinas. Em algumas modalidades, a farinha doce é uma farinha de milho doce.
