São reveladas neste documento composições comestíveis compreendendo uma composição de glicosídeo de esteviol compreendendo 5 a 30% em peso de rebaudiosídeo M (reb M), 15 a 35% em peso de rebaudiosídeo AM (reb AM) e 10 a 25% em peso de rebaudiosídeo N2 (reb N2) com base na quantidade total de glicosídeos de esteviol na composição comestível, sendo que a composição comestível melhorou as características de solubilidade e/ou formação de espuma.
