Abstract
A presente invenção se refere a produtos assados com propriedades melhoradas que contêm amido de mandioca ceroso pré-gelatinizado, e a métodos de preparo de tais produtos assados. Em algumas modalidades os produtos assados compreendem entre 1% e 10%, em peso, de amido de mandioca ceroso. Em modalidades os produtos assados têm uma firmeza de miolo igual ou melhor do que a dos produtos assados com o uso de amidos quimicamente modificados.
