Abstract
A presente invenção se refere a uma blenda de amido que inclui de 40 a 85% (p/p) de um amido não modificado contendo amilose e de 15 a 60% (p/p) de um amido não inibido quimicamente. A blenda de amido, mediante cozimento em água, tem uma alta viscosidade após um ou mais, dois ou mais, três ou mais, quatro ou mais, ou cinco ou mais ciclos de congelamento e descongelamento. Essa blenda de amido é útil em uma variedade de composições alimentícias e de bebidas, particularmente condimentos e molhos congelados.
