Abstract
PROCESSO PARA PRODUÃÃO DE SORVETE. A presente invenção refere-se a um processo para produzir sorvete a partir de ingredientes, sendo que os ingredientes são mesclados em forma de uma pré-mistura (1) e esta pré-mistura (1) é pré-congelada, sendo que no pré-congelamento é adicionado à pré-mistura (1) um produto criogênico, e a pré-mistura (1) será refrigerada para uma temperatura abaixo de 0ºC. Durante o pré-congelamento, serão adicionados à pré-mistura (1) ingredientes (10) em forma de pedaços que antes da integração na pré- mistura (1) foram refrigerados para uma temperatura inferior a -2ºC.
