Abstract

Um agente gelificante reversível termicamente derivado do amido modificado de uma variante de milho ceroso com um genótipo de endosperma com uma ou duas doses do gene extensor de amilose recessivo (ae). O amido pode ser modificado enzimaticamente, fisicamente, ou por hidrólise ácida. Tais agentes gelificantes exibem propriedades que pelem ser úteis rio espessamento ou fosnacendo, de outra forma, texturas únicas aos alimentos.
