Abstract
IOGURTES COM BAIXO TEOR DE PROTEÍNA CONTENDO AMIDOS MODIFICADOS A presente invenção refere-se a uma composição de iogurte com baixo teor de proteína compreendendo água, pelo menos um ingrediente lácteo e um amido ceroso reticulado, em que o amido ceroso reticulado é reticulado com grupos fosfato e tem uma viscosidade de pico Brabender de cerca de 600 a cerca de 1500 unidades Brabender e o amido ceroso reticulado está presente em uma quantidade suficiente para adicionar viscosidade ao iogurte. 0 amido ceroso reticulado também pode ser estabilizado por acetilação para obter vida útil mais longa.
