Abstract
A presente invenção refere-se ao amido do sagu fisicamente modificado que exibe um início crescente da temperatura de gelatinização e o desenvolvimento controlado da viscosidade, ainda retém calor significativo e viscosidade a frio, o processo de produção de tal amido e o uso do mesmo. Tais amidos são úteis e uma variedade de produtos, particularmente como viscosificantes.
