Abstract
"CREME ESPALHÁVEL, PREDOMINANTEMENTE CONTÍNUO EM ÁGUA, ACIDULADO, E, PROCESSO ADEQUADO PARA A PREPARAÇÃO DO MESMO" A invenção refere-se à um creme espalhável, predominantemente contínuo em água, compreendendo mais do que 35% em peso de gordura e menos de 3% em peso de proteína. Os cremes de acordo com a invenção têm uma textura semelhante à da manteiga e um comportamento em fusão semelhante ao da manteiga. O creme é caracterizado por um teor de gordura livre à 65°C de 30 a 85% em peso de gordura total e um valor de Stevens de 200 a 1000 g a 5°C e 50 a 300 g a 20°C. O creme tem um gosto fresco e um flavor cremoso e macio na boca.
