Abstract
AMIDOS E POLVILHOS GRANULARES PRÉ-GELATINIZADOS INIBIDOS TERMICAMENTE E PROCESSO PARA A SUA PRODUÇÃO Amidos e polvilhos, granulares pré-gelatinizados são inibidos termicamente mediante a desidratação de um amido para anídro ou substancialmente anídro e em seguida tratando pelo calor o amido desidratado a uma temperatura e durante um tempo suficiente para inibir o amido. O amido pode ser pré-gelatinizado antes ou após a inibição térmica utilizando processos conhecidos na técnica que mantém a integridade granular. Preferivelmente, o pH do amido ou polvilho é elevado até 7,0 ou acima antes das etapas de inibição térmica. A etapa de desidratação pode ser realizada mediante aquecimento direto do amido, mediante extração do amido com um solvente, ou mediante secagem por congelação do amido. Preferivelmente, as proteínas e/ou os lipídeos são removidos antes ou após a inibição térmica.
