COMPOSIÇÃO DE AMIDO TOLERANTE A PROCESSO COM ELEVADO TEOR DE FIBRA DIETÉTICA TOTAL A presente invenção se refere a uma composição de amido com um teor de fibra dietética total (TDF) elevado que retém seu teor de TDF quando de processamento. Em particular, mais de 50%- de tal fibra são retidos quando de processamento por extrusão. Tal amido é útil na fabricação de produtos alimentícios com elevado teor de fibra, incluindo produtos extrudados, tais como cereais e salgadinhos para o café da manhã.
