É descrita uma instalação industrial que inclui uma autoclave contínua (1) para o tratamento com aquecimento de alimentos medidos em recipientes abertos (9) carregados sobre bandejas (12) que são avançados atráves de autoclave (1) por uma transportadora de avanço (38). Uma camâra de resfriamento (6) se comunica em uma extremidade com a autoclave (1) através de um túnel com compressão de ar (7) e na outra com um sistema estéril para selar os recipientes (9) cheios de alimentos cozido.
