Abstract

A presente invenção refere-se a emulsões de água em óleo tendo vesículas de lipídios intactas na fase de água ou aquosa. Métodos de produzir emulsões também são divulgados. As vesículas preferidas para uso nas emulsões são vesículas de lipídio paucilamelares, mais preferivelmente aquelas tendo anfifilos não-iônicos como seu principal componente estrutural. As emulsões de água em óleo são úteis em cosméticos, produtos farmacêuticos e alimentos como margarina.
