A invenção descreve um processo para a preparação de um leite acidificado e desidratado, por fermentação de um leite até um valor de pH compreendido entre 4,0 e 5,0 com uma combinação de pelo menos uma estirpe de Streptococcus thermophilus e de uma estirpe de Lactobacillus helveticus formando exclusivamente o ácido láctico L (+), e posterior secagem.
