Abstract
Uma mistura de leite com teor reduzido de calorias para uso em sobremesas de leito gelada e iogurte é feita a partir de leite e/ou de produtos de leite que foram tratados com uma enzima lactase/beta-galactosidase que hidrolisa lactose em glicose e galactose. Isto aumenta a doçura, reduz problemas de cristalização de lactose e cria uma maior redução de ponto de congelamento. Aspartame ou outros adoçantes de elevada potência podem ser adicionados sem a necessidade de agentes de volume adicionais e/ou adoçantes de volume.
