Abstract
COMPOSIÃÃES DE CHOCOLATE CONTENDO ETILCELULOSE. Um chocolate resistente ao calor contendo etilcelulose. A etilcelulose é introduzida no chocolate como uma solução em óleo ou em um solvente não aquoso, adequadamente, em uma quantidade de cerca de 1% a cerca de 3% de etilcelulose em peso. Oleogéis de etilcelulose também podem ser utilizados para substituir uma parte dos óleos e gorduras normalmente presentes no chocolate e/ou formular recheios para chocolates que apresentem migração do óleo reduzida. Também são fornecidos métodos para fazer compostos de chocolate de acordo com a invenção.
