Abstract
MÉTODO PARA PRODUZIR ESTEREOISÔMEROS DE MONATINA OU SAL DESTA, COMPOSIÇÃO COMPREENDENDO UM PRECURSOR DE R-MONATINA E ENZIMAS D-AMINO-TRANSFERASE E RACEMASE. A presente invenção refere-se a monatina e certos estereoisômeros de monatina, tais como R,R monatina e S,R monatina, bem como sais destes, que são produzidos utilizando polipeptídeos e vias biossintéticas. Estes polipeptídeos e vias biossintéticas também são úteis na produção de ácido g lutárico R-2-hidróxi-2-(indol-3-ilmetil)-4-ceto, um intermediário que é formado em certas vias de síntese de monatina, incluindo algumas vias biossintéticas.
