Abstract
MASSA INTEGRAL DE SOJA SEM GLÚTEN A presente invenção se refere a uma massa alimentícia de soja isenta de glúten. Este produto é processado a partir da soja descascada, aquecida e hidratada, secada e depois micronizada. Essa soja micronizada é misturada a uma pequena parte de uma liga alimentícia, hidratada a quente, extrusada e secada. O produto final é uma massa semi-pronta, seca, com mais de 90% de soja na sua composição. Esse processo permite que seja mantido todo o valor nutricional da soja, porém eliminando totalmente suas indesejáveis enzimas antinutricionais, assim como a lipoxigenase, enzima responsável pelo gosto adstringente da mesma.
