Abstract
MÉTODO APERFEIÇOADO PARA AUXILIAR NA LIBERAÇÃO DE UM PRODUTO DE UMA SUPERFÍCIE RECEPTORA RECOBERTA POR ÓLEO NUM APARELHO DE FRITURA CONTENDO UM ÓLEO DE FRITURA Um método inovador para controlar a adesão de produto alimentício a superfícies de processamento através da manipulação da composição do óleo da fritadeira e do tratamento das superfícies de processamento. A adição de diversas espécies químicas ao óleo da fritadeira permite o controle da tensão interfacial entre o produto alimentício e a superfície de processamento. As superfícies de processamento podem ser submetidas a um processo de abrasão para reduzir a área da superfície em contato com. o produto alimentício reduzindo desta maneira a adesão indesejada do produto.
