A invenção refere-se a um encapsulato de co-acervato complexo que compreende um núcleo lipofílico e uma parede hidrofílica, em que a parede cobre substancialmente o núcleo, sendo que a parede consiste substancialmente em beta-lactoglobulina e um ou mais polímeros que têm um ponto isoelétrico abaixo daquele da beta-lactoglobulina.
