Abstract
"TRATAMENTO DE PRESSÃO DE ALIMENTO PARA REDUZIR DETERIORAÇÃO". A presente invenção amplamente descreve um método de tratamento por pressão alimentos contendo culturas, em que os tratamentos de pressão são executados sob tais condições de modo que as culturas sobrevivem enquanto o crescimento de microflora de deterioração é reduzido, retardado, prevenido ou eliminado. Alimentos tratados de acordo com a invenção incluem alimentos de laticínios culturais (como iogurtes), sucos de fruta e vegetais e outros alimentos de laticínios (como queijo).
