Abstract
"MÉTODO DE REDUÇÃO MICROBIANA DE CARCAÇA ANIMAL". A presente invenção é um método de reduzir níveis microbianos durante a produção de carne. O método inclui aplicar um agente antimicrobiano na pele de animal, antes da remoção da pele da carcaça. O método pode ainda incluir enxágüe e secagem da pele de animal.
