Abstract
A presente invenção refere-se a uma gordura de frango de alto ponto de fusão produzida por fracionamento a seco de gordura de frango semilíquida. Em particular, a invenção se refere a uma gordura de frango, em que a gordura de frango tem um teor total de gordura saturada de 48 a 72% em peso (com base no peso da gordura total) que compreende os ácidos graxos C16:0 na faixa de 36 a 55% em peso (com base no peso da gordura total) e C18:0 na faixa de 11 a 19% em peso (com base no peso da gordura total).
