Abstract
A presente invenção refere-se a produtos de bebidas. Em particular, a invenção se refere a um sistema de proteína induzido pela agregação controlada de proteínas do leite que confere excelentes atributos sensoriais ao produto de bebida, em particular, quando não contém gordura e/ou tem açúcar reduzido. Um método para a produção dessa bebida e os produtos obtidos a partir do método também fazem parte da presente invenção.
