A presente invenção consiste na aplicação de biorreator(es) contendo levedura cervejeira e/ou enzimas imobilizadas, acoplados à linha de fluxo em recirculação dinâmica a um tanque de processo contendo mosto cervejeiro, e respectivo tratamento térmico, visando a otimização e/ou redução de tempo de processo na fermentação de cervejas em processos não-contínuos, como bateladas simples e alimentadas, quando em comparação aos métodos tradicionais de fermentação submersa estacionária.
