Abstract
"PROCESSOS PARA PRODUÇÃO E CONSTRUÇÃO DE UMA VARIANTE DE UMA ALFA-AMILASE MALTOGÊNICA, POLIPEPTÍDEO, SEQÜÊNCIA DE ÁCIDO NUCLEICO, VETOR DE EXPRESSÃO RECOMBINANTE, CÉLULA HOSPEDEIRA TRANSFORMADA, E, PROCESSOS PARA PRODUZIR POLIPEPTÍDEO E PARA PREPARAR UMA MASSA OU UM PRODUTO COZIDO PREPARADO DA MASSA" Os inventores modificaram a seqüência de aminoácido de uma alfa-amilase maltogênica para obterem variantes com propriedades melhoradas, com base na estrutura tridimensional da alfa-amilase maltogênica Novamyl. As variantes possuem propriedades físico-químicas alteradas, por exemplo, uma condição mais favorável de pH alterado, termostabilidade melhorada, atividade específica aumentada, um padrão de clivagem alterado ou uma capacidade aumentada para reduzir a retrogradação do amido ou envelhecimento do pão.
