Derivados de oxima do ácido carboxílico que possuem a fórmula I, em que n é 1 ou 0, X representa O ou N, R² e R³ representam quaisquer resíduos de uma R²R³C=NOH oxima e R¹ representa um radical alquila-, alquenila-, alquinila-, cicloalquila-, cicloalquenila-, alcoxialquila-, ariloxiaril-, alcoxiaril-, ariloxialquil- ou aromático substituído ou não-substituído, ramificado ou não-ramificado preferencialmente com 1 até 30 átomos de C, ou X~ n~R¹ representa são úteis como precursores para a liberação de compostos organolépticos, especialmente para aromas, fragrâncias e agentes de mascaração e/ou compostos antimicrobianos.
