Abstract
Patente de Invenção: "COMPOSIÇÃO PROTÉICA E PROCESSO PARA ISOLAMENTO DE UMA COMPOSIÇÃO PROTÉICA A PARTIR DE UMA FONTE MUSCULAR" . É fornecido um processo para isolar um componente protéico de tecido muscular animal por meio da mistura de uma forma em partículas do tecido com um líquido aquoso ácido tendo um pH abaixo de cerca de 3,5 para produzir uma solução rica em proteínas essencialmente livre de miofibrilas e estrutura teciduais de sarcômeros. A solução aquosa rica em proteínas pode ser tratada para realizar precipitação protéica, seguida por recuperação protéica.
