Abstract
"FORMULAÇÃO DE SALMOURA PARA CURA DE CORDÃO DE SALSICHA EXTRUDADO". Um processo e um meio para coagulação de um gel de colágeno extrudado sobre um produto alimentício é descrito, em que um sal altamente dissolúvel, tendo uma dissolubilidade de pelo menos 8 moles por litro de água a 20°C, é aplicado ao gel de colágeno, com o que o gel de colágeno é coagulado em menos do que 60 segundos. O gel de colágeno é acidificado com um ácido inorgânico, tal como ácido clorídrico ou sulfúrico, e tem uma matéria seca entre 3 e 25%.
