Abstract
"PROCESSO PARA A PREPARAÇÃO DE UM MOLHO". Um molho para alimentos constituído de uma dase aquosa e 0-40 por cento em peso de gordura e/ou óleo, ainda contendo um agente espessante não iônico, e um eletrólito, e tendo um pH não maior que 4, e que contém também 3-8 por cento em peso de proteína globular desnaturada por calor, cujo molho é preparado por um processo compreendendo as etapas de (a) dissolver a proteína globular, um agente espessante não iônico e um eletrólito em água, (b) ajustar o pH a < 4 por adição de ácido, (c) aquecer e lentamente agitar a solução de modo que a desnaturação da proteína ocorre, (d) resfriar, (e) opcionalmente misturar outros ingredientes, onde, opcionalmente, etapa (d) segue etapa (e).
