Abstract

Patente de Invenção: "MÉTODO E APARELHO PARA PASTEURIZAÇÃO E DESATIVAÇÃO DE ENZIMA COM MICROONDA DE PRODUTO CONTINUAMENTE FLUINDO" . Um método e aparelho são fornecidas para pasteurização e desativação de um produto continuamente fluindo sem queimadura superficial do produto. Aquecimento com microonda é usado para gradualmente elevar a temperatura do fluido até a temperatura de pasteurização ou desativação. Preferivelmente, o fluido é preaquecido para uma temperatura dentro de uns poucos graus da temperatura de pasteurização ou desativação. Aquecimento condutivo de superfície e regeneração por calor podem ser usados para economicamente preaquecer o fluido.
