A presente invenção refere-se a uma bebida contendo proteínas e/ou peptídeos e é carcaterizada pelo fato de que ela contém Cereal-LTP e/ou homólogos como aqui definidos e/ou uma fração de Cereal-LTP modificado obtenível a partir do Cereal-LTP e/ou homólogos por aquecimento, fervura e/ou submissão à brassagem do Cereal-LTP e/ou homólogos em água em um pH entre 3 e 7. A invenção também diz respeito a um método para preparar a mesma e um uso de um aditivo de formação de espuma.
