Para produzir produtos de pasta, gnocchi ou semelhantes, farinha gelificada é hidratada à temperatura controlada e amassada, e a mesma resultante é extrudada através de uma cabeça de extrusão (7). Os produtos de pasta ou gnocchi produzidos podem ser consumidos diretamente ou embalados para consumo posterior após imersão dos mesmos em água quente por um breve período.
