Abstract

Lipases compreendendo uma tríade catalítica semelhante a tripsina, incluindo uma serina ativa situada em uma bolsa de união alongada, predominantemente hidrófoba, da molécula de lipase, a qual bolsa faz parte de, e é circundada por, uma zona de contato de lipídeo, são submetidas a mutação por abandono ou substituição de um ou mais resíduos de aminoácido na zona de contato de lipídeo, de modo a mudar a carga eletrostática e/ou a hidrofobicidade da zona de contato de lipídeo, ou de modo a mudar a conformação de superfície da zona de contato de lipídeo das lipases.
