Abstract
MISTURA DE EMPANAMENTO SECA, MÃTODO PARA REDUZIR A RETENÃÃO DE ÃLEO EM ALIMENTOS FRITOS E MÃTODO PARA PREPARAR ALIMENTOS EMPANADOS. O presente pedido descreve métodos para reduzir aretenção de óleo de alimentos fritos, compreendendo adicionar água a uma mistura de empanamento compreendendo farinha, pelo menos um tempero, opcionalmente, um agente de levedação, e metilcelulose granulada ou aglomerada, com a ressalva de que a metilcelulose tenha sido granulada ou aglomerada com uma quantidade suficiente de carboximetilcelulose como ligante, de maneira a formar um empanamento; contatar um alimento com o empanamento de maneira a preparar um alimento empanado, e fritar o alimento empanado.
