É descrita a síntese de compostos anfifílicos derivados de ácidos graxos e açúcares que compreende a fórmula geral HOCH~ 2~(CHOH)~ n~-CO-NH.(CH~ 2~)m...NR^ 1^...CO...R^ 2^ onde R^ 2^ é uma cadeia carbônica alifática, linear ou ramificada, saturada ou insaturada, constituída de 6 a18 carbonos; R^ 1^ é um átomo de hidrogênio ou uma cadeia carbônica alifática, linear ou ramificada, constituída de 1 a 6 carbonos; m é um número inteiro de 2 a 6 e n é um número inteiro de 3 a 5. Os compostos anfifílicos obtidos de acordo com o processo de síntese compreende compostos não iônicos da classe das aldonamidas.
