Processo de gelatinização de amido de grãos de cereais inteiros, prensados, quebrados, triturados ou seus subprodutos com o os farelos e farinha tendo como objetivoprincipal obter máxima gelatinização do amido. Este processo é compreendido pelas seguintes etapas essenciais: pré-limpeza, hidratação, tratamento térmico, resfriamento e secagem dos grãos inteiros, prensados, triturados ou moídos e armazenagem.
