Trata-se de um processo para a produção de um ou mais ácidos graxos ou seus derivados a partir de um carboidrato, processo este que envolve o tratamento do carboidrato com um micro-organismo que o converte em um óleo microbial contendo um ou mais ácidos graxos seus derivados, e no qual o carboidrato em questão é a inulina e/ou é derivado do Jerusalem Artichoke.
